with Smokey blue cheese and blood orange oil

Seared Pleasant View Farm foie gras with caramelized pear

and salted pine nut crumble

Chilled Blue king crab with Meyer lemon butter, chervil lemon salad

Second Course

 

Sunchoke soup with truffled sunchoke chips and Jamon Iberico

Yellowtail crudo with preserved lemon, fennel, green olive

or

Burrata with black olives, wild arugula, aged balsamic and olive oil croutons

 

Third Course

 

Semolina gnocchi with wild mushrooms, porcini cream and Parmigiano Reggianno

Arctic char with smoked lentils, truffled salsify, Savoy cabbage

Wagyu hanger steak with Pommes de terre Robuchon,

Brussels sprouts and black peppercorn sauce
