First Course 

 Miner's lettuce and blood orange salad

with avocado and black pepper

Second Course

 Neah bay halibut with Spring onions, favas,

snap peas and buttery spot prawn broth

Dessert course 

  Rhubarb and lemon curd parfait

with citrus and crispy almonds
