Roasted tomato ancho soup, fonduta, radish, cilantro

Roasted beet, fennel, apple and Treviso salad with Smokey Blue cheese

Lamb belly steamed buns, maitake mushroom hoisin, kohlrabi kimchee, peanut

 

Second Course 

 

Bouillabaise: pollock, clams, mussels, fennel, potatoes, rouille and grilled crouton

Grilled pork collar, green papaya, lime fish sauce glaze, Thai basil, spicy cashews

Bucatini, sage pesto, pepitas, delicata squash, ricotta salata, chanterelles 

 

Dessert course

 

Pumpkin mascarpone cheesecake, einka graham crumble, roasted white chocolate

Mexican chocolate pot de creme, coffee whipped cream, cinnamon sugar churro

Red wine quince sorbet, quince butter, cardamom chiffon cake, huckleberry
