Fluke crudo with finger lime pearls, pink grapefruit and Taggiasca olives


Second Course 

Butter poached Alaskan spot prawns with Sugar pumpkin, Brussels sprouts, vanilla bean jus



Third course

Cocoa cavatelli with prosciutto-venison ragu, rye ‘pan grassato’



Fourth course

Wagyu beef cheek with smoked pommes de terre Robuchon, chanterelles, sauce Perigord 




L’Affumicato, Fourme d’Ambert Blue and Le Sapin with Billy’s honey and Lark crackers




Theo chocolate panna cotta with salted almond streusel, cocoa nibs and coffee cream
