Winter is the Pacific Northwest is wet and cool, and the perfect setting for truffles to flourish. Chef John Sundstrom is partnering up with forager, Sunny Diaz, for a six-course dinner featuring Pacific Northwest truffles on Sunday, February 23.
As an extra added bonus, 10 guests of the evening will have the opportunity to purchase tickets to join Diaz, Stella, her award-winning truffle dog, and Sundstrom for an educational and interactive Oregon black truffle hunt earlier in the day about an hour from Seattle.
Diaz, an expert when it comes to truffles native to the Pacific Northwest, is the owner of Cascadia Truffles. Diaz, along with Stella, her highly-trained and loveable dog, are revered for leading educational and successful truffle hunts throughout Washington and Oregon.
“Truffles native to the Pacific Northwest are unlike any other truffle in the world,” said Diaz. “They’re fruity on the nose with notes of black cherry, amaretto, and vanilla and earthy on the palate.”
“They’re incredibly versatile and go especially well with charcuterie, seafood, and desserts,” adds Sundstrom. “Even cocktails.”
The Sunday, February 23 Pacific Northwest Truffle Dinner at Lark begins at 6pm.
The menu for the evening is as follows:
Welcome Course
Pork Belly Steamed Bun with truffle aioli and scallion
Truffled Foie Gras Mousse with crouton
Brioche with truffle butter and fried quail egg
First Course
Warm Goat Cheese with grilled leeks, truffle gribiche vinaigrette, and watercress
Second Course
Alaskan Spot Prawns with crispy sunchoke and black truffle prawn risotto
Third Course
Venison Loin with black trumpet mushroom, red onion agro dolce, and
truffled goose fat potatoes
Cheese Course
Cacio di Bosco al Tartufo
Fourme d’Ambert
Truffle Infused Dinah’s Cheese

Black Truffle Rice Pudding Brulee with brown butter pain d’epice madeleines
Cost of the dinner is $190/person and includes beverage pairing, tax, and gratuity. Ten lucky guests will also have the opportunity to purchase a ticket to the pre-dinner truffle hunt experience for $150/person. Space is limited and tickets are required.
