Curly Endive Salad with pomegranate, candied hazelnuts, and Brillat-Savarin triple cream cheese crouton

Rosti Potatoes with clabber cream, chives and smoked Steelhead caviar

(American White sturgeon caviar available for a $25 supplement)

or

*Seared Pleasant View Farm Foie Gras with quince and crispy chicken skin

($15 supplement)

 

Second:

Burrata with arugula, truffle vinaigrette, and olive oil croutons

or

Yellowtail Crudo with fennel, preserved lemon, and green olive

or

Sunchoke Soup with truffled sunchoke chips

(Weathervane scallop available for a $10 supplement)

 

Third:

Semolina Gnocchi with artichokes Barigoule, black olive, and Parmigiano-Reggiano

Alaskan Spot Prawns with Brussels sprout leaves, smoked butter, and rye crumble

Wagyu Hanger Steak with pommes de terre Robuchon and roasted shallot Syrah sauce
