5th Annual Wild Beast Feast at Lark 

This is our fifth Wild Beast dinner, and as is our tradition we'll be serving a multi-course family style feast of wild game. Bring your appetite and wine from your cellar: there will be no corkage fee this evening. Our wines are also available as usual.

$150 per person; drinks, tax and gratuity additional.

1st wave

Wild boar bratwurst, pretzel dot, grain mustard and sauerkraut

Cold smoked venison leg with red wine pickled huckleberries

Guinea hen, squab gizzard and foie gras terrine with quince preserve

Marcona almonds and marinated olives 

2nd wave

Warm partridge salad with crispy Olsen's potatoes, wild mushrooms

Venison tacos al pastor with pickled chiles and queso cotija

Smoked water buffalo bone marrow custard with toast  

                                               and parsley salad                                                

3rd wave

Grouse with buckwheat kasha, butter-braised baby turnips  

and buckwheat popcorn

Venison heart tartare with pickled beets, black walnut shortbread

Wild boar neck with semolina gnocchi, tomato and gorgonzola crema

Cocoa cavatelli with elk shortrib ragu and rye pan grattato

Pomegranate black pepper sorbet

4th wave

Pheasant, veal sweetbread, cocks comb pot pie

Blue hare with Barolo and black truffle fonduta

Pleasant View duck breast with red cabbage, apples  

and foie gras emulsion

Wild boar tongue dolce forte with crispy pig's blood


Vanilla madeleines with Meyer lemon custard sauce

Theo chocolate panna cotta
